Arroz con Pollo Puertorriqueño
 10 Ingredients
3 1/2 lbs of chicken, chopped 3 cups long grain rice 3 1/2 cups of water 1/2 cup of basic sofrito (1/4 onion, green pepper, minced and 3 garlic cloves crushed) 1/2 teaspoon ground cumin 2 tablespoons of olives with capers 1 teaspoon of seasoning containing cilantro and achiote 2 oz. Tomato sauce (tomato) 2 tablespoons of oil (to fry the chicken) Salt and black pepper to taste
STEPS:
 STEP 1: Season the chicken in advance with salt and pepper, leave in the refrigerator until the time of cooking. STEP 2 Heat the oil in a pot or pot over medium heat. Add the chicken dabs and brown them on each side for about 5 minutes, remove them, keep them covered. STEP 3 Add the sofrito, the olives with capers, seasoning, tomato sauce, cumin and sauté for 4 minutes over low heat. STEP 4 Add the rice. Mix well with the sofrito, add the water and let boil. STEP 5 When the rice is drying, lower the heat to the minimum and cover it. Continue cooking for 20 to 25 more minutes, until the rice is well cooked. 1) Roasted strawberry and cream pie

Ingredients:

435g store-bought sweet shortcrust pastry rolled to a thickness of 3mm
750g strawberries, halved if large
1 vanilla bean (split, seeds scraped) or 2-3 teaspoons of vanilla extract
2 tablespoons (tbs) of maple syrup
1 thyme sprig (plus extra to decorate)
500g mascarpone cheese
1½ cups thickened cream
1/3 cup icing sugar
1 teaspoon of vanilla bean paste
Method

Preheat oven to 200°C. Line a 22cm × 5cm-deep pie dish with the shortcrust pastry and trim away the excess. Prick holes in the pastry base to stop it from rising or use baking beads. Cook for 20 minutes or until golden. Leave to cool completely.
Toss together strawberries, vanilla extract, maple syrup and thyme on a baking tray lined with baking paper, and roast for 15 minutes or until soft. Cool to room temperature.
Whisk mascarpone, cream, icing sugar and vanilla bean paste in a bowl until thick.
Spread into the cooled pie crust and top with roasted strawberries and their syrup.
