RECIPE OF RED ENCHILADAS
INGREDIENTS:
4 guajillo chiles, open, clean and without seeds.4 wide chiles, open, clean and without seeds.2 cloves garlic, chopped1/4 teaspoon dried Mexican oreganoSalt and pepper to taste12 corn tortillas2 cups of shredded pork or chicken (optional)1 1/2 cup fresh crumbled cheese1/2 cup finely chopped white onion1/3 cup of vegetable oilOptional fitting:2 cups precooked potatoes and cubed items2 cups precooked carrots and cubed batchesLettuce or cabbageRadishes

INSTRUCTIONS:1. Let's start with the sauce: Lightly toast the chiles in a hot comal, pressing them with the help of a spatula, but making sure not to burn them. (This step takes only a few seconds on each side).2. Once the peppers are roasted, place them in a saucepan with water and simmer them for 15 minutes, or until they are soft.3. Remove the pot from the heat and let the chiles cool for 10 or 15 minutes. (Remember that these should be soft and soft).4. After the chilies have cooled, drain them and place them in the blender with the garlic cloves; Add ½ cup of clean water and blend until smooth. (If the sauce is very thick or the chiles are not well ground, it is necessary to pass it through a fine sieve). Season with oregano, salt and pepper.5. Place the enchilada on a plate. Add more oil to the pan as needed and continue the process of frying the tortillas: first raisin the sauce and then oil. Place inside the preheated oven the dish where you are putting the enchiladas to keep them warm while you finish frying the rest of the tortillas.9. To serve the enchiladas, first place the filling of your choice in the center of the tortilla and then fold or roll it as shown in the photo above.10. Sprinkle enchiladas with cheese and onion; add any other garnish to your liking, and ... enjoy!
