Canton Esmeraldas. The canton of Esmeraldas is a subnational Ecuadorian territorial
entity, of the Province of Esmeraldas. Its cantonal head is the city of Esmeraldas, where a
large part of its total population is grouped.

Gastronomy of the Cantón Esmeralda
Rice with Shrimp: (Atacames) It is one of the exquisite dishes and savored in the canton,
consisting of rice with breaded shrimp accompanied by a delicious salad, and lemon slices.
Steamed Fish: (Esmeraldas) Fish is caught with sauce and lemon, for thirty minutes then
it is placed in a pan with garlic, pepper and vinegar, it is left for ten minutes. It is served
with rice.
The Encocados: (San Lorenzo) This succulent dish can be wild meat, seafood,
crustaceans or Creole chicken, having coconut milk as a basic ingredient.
Ceviches: (Río Verde) Many varieties are offered, such as shrimp, shell, fish, mixed, all of
them accompanied by patacones and rice.
Fish or Shrimp Casserole: Prepared with fish or shrimp, grated and liquefied green
plantains, grated coconut, juice, peanuts, red and white onion, pepper, garlic, oregano and
oil. It is served with white rice.
Granizado.- is a soft drink made of crushed or grated ice, it has condensed milk, traditional
syrups such as: tamarind, mint, rose, naranjilla, strawberry or pineapple. They are served
in plastic cups.
Cocadas.- Sweet of coconut and sugar, with round and flattened shape, which due to its
hardness resembles a nougat. For its elaboration, large bronze or aluminum pans are
used, where they melt sugar, cinnamon, anise and cloves. Finally, add the grated coconut.
They use firewood in the cooking process.
