1) Roasted strawberry and cream pie

Ingredients:

435g store-bought sweet shortcrust pastry rolled to a thickness of 3mm

750g strawberries, halved if large

1 vanilla bean (split, seeds scraped) or 2-3 teaspoons of vanilla extract

2 tablespoons (tbs) of maple syrup

1 thyme sprig (plus extra to decorate)

500g mascarpone cheese

1½ cups thickened cream

1/3 cup icing sugar

1 teaspoon of vanilla bean paste

Method

Preheat oven to 200°C. Line a 22cm × 5cm-deep pie dish with the shortcrust pastry and trim away the excess. Prick holes in the pastry base to stop it from rising or use baking beads. Cook for 20 minutes or until golden. Leave to cool completely.

Toss together strawberries, vanilla extract, maple syrup and thyme on a baking tray lined with baking paper, and roast for 15 minutes or until soft. Cool to room temperature.

Whisk mascarpone, cream, icing sugar and vanilla bean paste in a bowl until thick.

Spread into the cooled pie crust and top with roasted strawberries and their syrup.

2) Brownie

Ingredients:

1/2 cup butter or margarine

2 large eggs

1 cup all purpose flour

1 cup semisweet chocolate chips

1/2 cup brown sugar packed

1/2 cup chopped walnuts

Method

Preheat oven to 175ºC.

Grease 8×8 inch (20×20 cm) pan.

Combine butter or margarine and chocolate chips in saucepan on low heat. Stir often until melted. Do not overheat. Remove to a hot pad.

Beat eggs in mixing bowl until frothy. Add sugar and vanilla. Beat to mix. Add chocolate mixture to this mixture. Stir.

Add flour and walnuts. Stir just until moistened.

Scrape batter into pan. Spread evenly.

Bake in oven for 25 minutes. Cool brownies before cutting.

3) Chunky Pancakes

Ingredients:

1 cup all-purpose flour

3 teaspoons baking powder (or a sachet of Royal)

1/4 teaspoon salt

3/4 cup skimmed milk

3 tablespoons butter, melted

2 eggs

1 tablespoon white sugar

1 teaspoon vanilla extract

1 large banana, cut into small slices

1/2 cup miniature semisweet chocolate chips

1/4 cup chopped pecans or walnuts

Method

Combine flour, baking powder and salt.

In a separate bowl, whisk together the skimmed milk, melted butter, eggs, sugar, and vanilla. Make a well in the centre of the dry ingredients and gently stir in the wet ingredients.

Fold in the banana, chocolate chips, and nuts.

Add a ¼ cupful to an oiled large frying pan over a medium heat

Cook until bubbles appear on the surface, flip and cook until browned on the other side.
