Fresh grape juice contains 10.0% by weight in solids and the rest of water; while concentrated grape juice contains 50% solids. it is desired to produce concentrated grape juice. to guarantee the quality of the product, a bypass is carried out before the evaporator with a fraction of the fresh juice; the juice entering the evaporator is concentrated until it contains 70.0% solids, and the product is mixed with the fresh juice from the bypass to achieve the desired final product concentration. calculate the amount of concentrated juice produced for each 250 kg of fresh juice that feeds the process and the fraction of the feed that is derived before the evaporator. most of the volatile ingredients that flavor the concentrate are in the fresh juice that is diverted from the evaporator. more of these ingredients could be in the final product by evaporating up to 90% solids instead of 50%; then a greater derivation of fresh juice could be made and thus achieve a tastier product. perform the same calculations that were requested previously. suggest the possible drawbacks of this proposal.
