3 red tomato mates, in halves
1 small piece small white onion
1 garlic clove, peeled
6 cups of purified water
2 carrots, peeled and cubed
2 zucchini in cubes
2 cups shredded cabbage
1 chayote peeled and cubed
1 cup cauliflower or broccoli florets
Salt and pepper to taste
Optional coriander for serving
Optional lemon for serving
INSTRUCTIONS
Cut the vegetables you are going to use.
Blend the tomato, onion and garlic with 1 cup of water until it is smooth and there are no lumps. You can heat a drizzle of oil in a pot or you can add no oil. Empty the mixture from the blender and cook over medium heat for a few minutes, until it changes to a darker color.
Add 5 cups of water, the carrot, chayote, cauliflower and broccoli. Cut the vegetables the same size so they are ready at the same time.
Season to taste with salt and pepper.
Bring to a boil over high heat. Once it boils down to low heat, cover the pot and cook for 15 minutes.
Add the zucchini, cabbage, cover the wave and cook 5 to 7 more minutes or until the vegetables are soft or as you like.
Serve to taste with lemon juice and a little coriander if you prefer.
