Galician empanada:


Ingredients of the stew.-

3 whole chicken or 4 kg. Chicken

2 Kg of onion

2 Kg of paprika

600 Ml. of oil approximately

2 tablespoons of ground Spanish paprika

1 cup of red or white wine

Garlic for seasoning



Preparation.-

Boil the chicken with the skin and without the entrails, with salt and garlic. Then reserve the broth for the dough. Wick the chicken in big and thick slices, cut the onion and the paprika in thick strips.


Having all the ingredients; fry the paprika, garlic and then the onion add the chicken and the rest of the seasoning.


Apart from this, a dough is made for the bread, the only thing that will be substituted is the water for the chicken broth and the salt will be lowered a little or all of it. Grease the tray and put kerosene paper and rest for 15 or 20 minutes.


Spread the dough, after these minutes, place it on the tray and add the stew. Stretch the other part of the dough and place it on top, press the edges to seal the two layers; decorate it and take it to ferment, later varnish it and take it to the oven at 150 ºC for 25 or 30 min, "it has gone" very well.
