Raspberry bellinis
Ingredients
1 package (10 ounces) frozen sweetened raspberries, thawed
1 tablespoon lemon juice
1 teaspoon vanilla extract
4 cups chilled prosecco
Mint leaves and fresh raspberries, optional
Directions
Place raspberries in a blender; cover and process until pureed. Press through a fine-mesh strainer into a bowl; discard seeds. Stir in lemon juice and vanilla.
Fill each champagne flute with 2 tablespoons raspberry mixture; top with prosecco. If desired, garnish with mint and fresh raspberries.
2.- Cheese potatoes
Ingredients
6 large potatoes, peeled and thinly sliced
3 tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
1 cup whole milk
2 cups shredded cheddar cheese
Minced fresh parsley
Directions
In a large nonstick skillet, cook potatoes in butter until crisp-tender and lightly browned. Sprinkle with salt and pepper. Pour milk over all; cover and cook until milk is absorbed. Sprinkle with cheese; stir until melted. Garnish with parsley.
